Meat Lovers Stew
A hearty dish with steak, lamb, chicken, sausage, and tons of herbs and vegetables.
Ingredients
- ¼ cup olive oil
- 2 tablespoons chopped shallots
- 3 tablespoons chopped garlic
- ½ pound boneless chicken sliced
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ pound steak cubed
- ½ pound lamb
- 2 large potatoes cubed
- 3 tablespoons curry powder
- 3 carrots chopped
- 2 zucchini sliced
- 1 yellow pepper diced
- 1 onion chopped
- 5 garlic cloves
- ½ pound Italian sausage sliced
- 1 cup white wine
- 1 cup beef stock
- 6 cups water
- 1 cup grape tomatoes cut in halves
- 8 ounces green peas (fresh or frozen)
Cooking Steps
- In a large pot heat olive oil over medium heat. Add chicken, garlic, shallot, 1/2 teaspoon of the salt, and 1/2 teaspoon of the black pepper. Stir until chicken starts to brown
- Add steak, lamb, potato, and curry powder; mix well. Add carrot, zucchini, yellow pepper, and onion; stir. Stir in sausage, garlic, the remaining 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Pour in water, wine, and beef stock; stir.
- Bring to a simmer. Add grape tomato halves and peas. Reduce heat. Cover and simmer for 20 to 30 minutes or until vegetables are tender. Stir and let sit for 5 minutes.
