Oreo Cheesecake Bites
A delightful treat of crushed Oreo cookies beneath a mouth-watering cream cheese mixture cut into delicious little squares
Ingredients
- 3 Cup Oreo cookie crumbs
- 9 Tbsp. butter melted
- 1/3 Cup cold water
- 1 pkg unflavored gelatin
- 12 oz cream cheese softened
- 3/4 Cup Sugar
- 1 1/4 Cup Milk
- 1 1/2 Cup heavy cream
- 1/4 Cup powdered sugar
- 20 Oreo cookies chopped
Cooking Steps
- Preheat oven to 350°F. For crust, in a bowl combine cookie crumbs and melted butter; mix well. Press mixture into bottom and 11/2 inches up the sides of a 13 9 2-inch baking pan. Bake crust for 10 minutes; set aside.
- For filling, place water in a saucepan. Stir gelatin into water. Heat and stir over low heat until dissolved; set aside. In a medium bowl combine cream cheese and sugar until well blended. Stir in gelatin and milk until blended. Chill until thickened but not set.
- In a large bowl beat the cream and powdered sugar until stiff peaks form. Fold whipped cream into cream cheese mixture. Pour half of the filling into baked crust. Top with half of the chopped cookies. Top with remaining filling and then with remaining chopped cookies. Chill until firm. Cut into squares to serve.
