Tuna Tartare
One of those dishes thats great as a starter or a perfect way to impress your guests
Ingredients
- 4 3-ounce pieces tuna loin
- 1/3 cup +2 teaspoons seasoned rice vinegar
- 1/4 cup sliced sauce
- 2 tablespoons sesame oil
- 4 teaspoons sliced scallion
- 2 teaspoons chopped shallot
- Pinch salt
- Pinch black pepper
- One avocado, pitted, peeled, and sliced
- 12 whole chives
- 4 to 8 pieces pickled ginger
- 2 teaspoons chili oil
- 4 wonton wrappers (optional)
- Sesame oil (optional)
Cooking Steps
- Chop tuna very finely and place in a medium bowl. Add 1/3 cup of the vinegar, the soy sauce, sesame oil, scallion, shallot, salt, and pepper; mix well.
- Place a 2 inch metal ring mold in the center of a serving dish. Fill ring with 1/4 of tuna mixture and pat with spoon to make it firm. Carefully remove ring from around tuna mixture. Repeat to make 3 more servings
- Arrange avocado around the sides of tuna molds. Top tuna with chives and pickled ginger. Drizzle with chili oil and the remaining 2 teaspoons vinegar.
- If desired, serve tuna tartare with toasted wonton wrappers. To toast wonton wrappers, brush them with additional sesame oil and bake in a 325°F oven until slightly browned.
- Note: When buying tuna, don't buy tuna that has been stored directly on ice. This will bleed out the color.
